Super Happy Umami Juice! (aka Dashi concentrate)

Nice piece in the Times yesterday on the “mushrooming” numbers of DIY, backyard, mushroom gardeners in the US. I’ve been doing this sort of thing myself for years, and I’m glad to see the practice get some deserved press. As soon as I wrap up my MA thesis next month (on the very same subject), I’ll have lots to share here about my own activities in this area.
