Responding to the Haiti Earthquake
I have a bucket-full of posts to get up here about the breads I’ve been working on lately, but all that seems kind of petty right now, with the horror of what happened and is happening now in Haiti.

UPDATED 1/1/10: I realized that there is a slight error in my spreadsheet that might cause confusion for people using it. The second levain column reads “levain hydration %”, but it should read “levain flour %”. What this means is that if you keep a 100% hydration starter (50:50 flour/water), you need to enter 50%, not 100% there, or your...
